6 Minute Microwave Blackberry Sponge Pudding:

Possibly the quickest pudding to make – great in the summer when we have an abundance of berries in the allotment garden.

INGREDIENTS

  • 100g self raising flour
  • 100g sugar
  • 100g margarine
  • 2 eggs
  • 2 tbsp milk
  • 1 tsp of baking powder
  • 2-4 tbsp jam
  • Handful of Blackberries (Homegrown or foraged)

METHOD

  • 1 Pyrex bowl to go into the Microwave
  • 1 Mixing bowl for the ingredients

Into pyrex bowl add the 2 table spoons of jam and place the berries on top on this (this will be the top of the sponge pudding).

Into the mixing bowl put all the other ingredients and blend all until smooth – by hand or you can use a food processor.

Spoon out the mixture over the jam/berry topping in the pyrex bowl.

Place into the microwave on full power without a lid for 6 minutes.

Leave to stand for 1-2 minutes before serving.
